Koku Ryu Ramen 黑龍 - The Black Dragon

The Black Dragon is originated from Okinawa Japan. I suppose this ramen restaurant has just opened for a few months at Swatow street, with an eye-catching look, a small interior of the typical bar tools, table, and the Chef cooking in front. Their menu is simple enough, three choices including pork rib ramen, beef tendon ramen and beef tendon dipping noodle.
First comes to our table is the Kokuryu beef tendon ramen in soup. The thick broth is indeed rich and strongly flavored. The noodle is a thin-cut ramen, with a piece of roasted pork, medium boiled egg and a few jew ears.
This tsukemen is probably my next favourite after Mita Seimen Jo. The thick-cut noodle, which is very similar to udon, is served hot. The charcoal broth, with inclusion of well-braised beef tendon, perfect fat-ratio and tenderly roasted char siu and the slightly seasoned runny ramen egg, is out of this world. Perfect saltiness, perfect thickness, perfect amount. Despite the ramen here are on a pricey side, Koku Ryu is definitely worth a visit, especially for their beef tendon and tsukemen!
